This is the rice dish made with brinjal.

Ingredients (For two people):

1. Brinjal - 1/4th kilo
2. Tamarind - Around the size of a lemon
3. Groundnuts - 2 table spoon
4. Channadal (red chickpea) - 1 table spoon
5. Uraddal (black gram) - 1 table spoon
6. Mustard seeds - 1/2 table spoon
7. Sunflower Oil - 5-6 table spoon
8. Rice - 200 grams
9. Masala powder - 2 table spoon
10. Salt - 1-2 tea spoon (according to your taste)
11. Sugar - 1/4th tea spoon
12. Coriandar leaves - 6-8 stems


Preparatory steps:

1. Prepare Masala powder
2. Soak tamarind with water and let it soak for 10 minutes

3. Grind the dry coconut


Steps:

1. Take fresh brinjal. The good brinjal has less seeds. If the seeds are more sometime it may taste sour. Always buy the fresh ones.

2. Cut brinjal into small pieces. Keep them in water until you finish cutting.

3. Put little (one table spoon) of oil in a basin. Seanson with mustard seeds,goundnut. After leaving for a minute add channa daal (the red chickpea cut in to two pieces) and Urad daal (the black gram cut into two pieces). Fry it for a minute.(Until it becomes golden brown). Keep it aside. This is your seasoned content.

4. Now add some 4-5 table spoons of oil. Allow it to get heated up. add the cut brinjal taking it out from the water. Fry it for some time. Add salt and sugar.

5. Squeeze the soaked tamarind to get the tamarind juice. Add the tamarind juice to the frying brinjal.

6. Add the masala powder to the frying brinjal and leave it until the water content of the tarmarind juice evaporates.

7. Add the grinded dry coconut. Mix it properly and leave it for 1-2 minutes.

8. Add the seasoned content from step 3.

9. Now add rice and mix it well.

10. Before serving add the chopped coriandar leaves.

The same recipe can also be made with other vegetables like cabbage,beans,capsicum with little onion. Just replace brinjal with any other vegetable of your choice.

How to make masala power -

Ingredients -

1. Two tea spoon of channa daal (zthe red chickpea cut in to two pieces)
2. Two tea spoon of urad dall (the black gram cut into two pieces)
3. 4-5 Fenugreek (meethi) seed
4. 6 -10 red chilles (according to your taste)
5. 1 tea spoon of sunflower oil
6. 5 - 6 tea spoons of coriender seeds
7. 2 cardamam
8. a inch piece of Cinnamon (chakke)
9. 4-5 Clove (lavang)
10. 1 tea spoon od cumin (jeera)

The Indian spices are usually arranged like below:

1. keep oil in a basin. allow it to get heated up.
2. Add all the ingradients and fry until the daal becomes golden brown.
you will get the nice smell of the corinder seeds
3. Turn off the stove.
4. Allow it to get cool
5. Grind it into very nice powder.
