Vegetable fried rice
How to make the Vegetable fried rice ? There are different ways of preparing it. At least the two varients are described below. You may wish to try any one of them.
Please follow the below steps.
Type I
Ingredients (For two people):1. Vegetables - Carrot - 100 grams
Beans - 100 grams
Cauliflower - 100 grams
Raw green peas - 50 grams
Keep the vegetables cut into small pieces.
2. Oil - 5 table spoon
3. Cumin (jeera) - 1 tea spoon
4. Cinnamon (chakke) - 2 inch piece
5. Clove (lavang) - 4 to 6
6. Rice - 200 to 250 grams
7. Salt - 1 - 2 table spoon
8. Coriender leaves - 15 stem
9. Red chilli (optional) 1-2
Steps:
1. Place the container on the stove and keep oil in it to get heated.
2. Add Cumin, Cinnamon and clove. fry it for 2 to 3 minutes. (Cinnamon and clove and spices. You may use it more or less acoording to you taste).

This will be the seasoned one.
3. Add the vegetables and fry it. Allow it for half cook. (Vegetables like Onion, Potato, Capsicum can also be used according to your taste).

The cauliflower cleaned with warm water, termeric and pinch of salt.


This will be the fried vegetables
4. Add rice and water. Water is twice the measurement of rice.
5. Add salt.
6. Close the lid of the pressure cooker and allow it to whistle two times. (You may also keep it in the microwave oven and set the time accordingly)
Mix it well once you open the lid.
7. Add coriender leaves
The tasty vegetable fried rice is ready to eat.
This would be very tasty if we eat it with the raita.
How to prepare raita -
Ingredients -
1. Vegetables -
Onion - 2
Tomato - 1 - 2
Green Chillies - 1
Coriender leaves - 5 stem
Cut all of them into small pieces.
(Cucumber can also be used)
2. Youghurt (curd) - 250 grams
3. Salt - 1 table spoon
Steps - 1. In a bowl add all the vegetables with cut coriender leaves(Chilles are optional. If you like spicy then it can be used. If you do not have green chilles then red chilles can also be used. Only thing is raita would be little reddish in color)

2. Add youghurt (Curd)
3. Add salt while serving (Adding salt before makes the raita watery which would not be tasty)
4. Mix it well.
5. Raita is ready.
6. Serve with vegetable fried rice.
This rice dish is very easy, can be made fast and very tasty to eat.

Type II
Ingredients (For two people):
1. Vegetables - Carrot - 100 grams
Beans - 100 grams
Onion - 1
Potato - 1
Tomato - 1
Raw green peas - 50 grams
Keep the vegetables cut into small pieces.
2. Oil - 5 table spoon
3. Cumin (jeera) - 1 tea spoon
4. Red chilli power - 1 tea spoom
5. Termeric - 1/2 tea spoon
6. Rice - 150 to 200 grams
7. Salt - 1 - 2 table spoon
8. Coriender leaves - 15 stem
Steps:
1. Cut the vegetables and keep it ready.

2. Place the container on the stove and keep oil in it to get heated.
3. Add Cumin, fry it for 2 to 3 minutes. 4. Add the vegetables and allow it to half fry.

5. Add rice.
6. Add water exactly twice the measurment of the rice.
7. Add termeric, red chilli power (more or less according to your taste) and salt (once again to your taste)
8. Close the lid of the pressure cooker and allow it to vistle two times. (You may also keep it in the microwave oven and set the time accordingly)
9. Add coriender leaves Mix it well once you open the lid.
The tastey vegetable fried rice is ready to eat.
