How to make a dosa along with a side dish
How to make a delicious Dosa ?
Ingredients:-
1. Urad daal(Blackgram into two) /black gram(outer raper taken away) - 75-100 grams
2. Dosa Rice (the thick Rice) - 250-300 grams
3. Channa daal (red chickpea cut into two) - 1-2 tea spoon
4. Fenugrek seeds - 1/4 spoon
5. Thick rice flakes - 50 grams
6. Salt - 1-2 tea spoons
7. Oil - 30 teaspoons
8. Ghee - 10-15 spoons
Steps -
1. Soak all the ingredients (1-5) for 6-7 hrs.
2. Grind into thick paste. The paste not very thick nor very watery. (May be like the paste of pancake )
3. Leave it for around 10hrs. This ferments the paste.
4. Add Salt according to your taste.
5. Keep the pan for heating. (normal heating would be fine).
6. Do dosa on the pan (As same as we make pan cakes) but little thin.
7. Spread a spoon of oil on the dosa.
8. Leave it for cooking. The bottom part of will become golden brown. This shows that the dosa is cooked.
9. Take it out form the pan.
10. Dosa is ready to serve.
11. But serve it with chutney - a side dish and palya - a side dish with vegetables.
12. Keep a spoon of ghee on the dosa while serving.
How to make chutney -
Ingredients -
1. Coconut - 1/2
2. Fried grams - 1 tea spoon
3. Green chillies/ red chillies - 5-6 (Depending on the hotness of the chilli)
4. Cumin - 1 table spoon
5. Tamarind - 2 inch
6. Jaggery - 4-5 inch
7. coriander leaves - 15 stems (if green chillies are used).
8. Mint leaves - 6-8 (optional)
9. Oil- 2 spoons
10. Mustard seeds - 1 spoon
11. curry leaves - 10-15
12. channadaal - 1/2 spoon
13. uraddaal - 1/2
Steps -
1. If red chilles are used then fry chillies and cumin for a minute with 1 spoon of oil.
2. If green chillies are used they can be used directly for grinding.
3. Add the ingredients from 1-8 for grinding and grind them into paste.
4. For seasoning - keep a spoon of oil for heating
5. Add mustard seeds, channa daal, urad daal and curry leaves and leave it for frying.
6. Add the seasoned one for the grounded chutny.
7. The chutny is ready

How to make palya
Ingredients -
1. Mustard seeds - 1 spoon
2. Curry leaves - 10-15
3. Green/red chillies - 5-6 (depending on the hotness)
4. Onion -5-6
5. Potato - 3-4
6. Coriander leaves - 10- 15 stems
7. Oil - 4-5 tea spoon
8. Coconut - 1/2 or little less and keep it grilled (optional).
Steps
1. Boil potatoes
2. Keep the onions cut into small
3. Take a pan and keep the oil for heating.
4. Add mustard seeds.
5. Once the mustard seeds fries, add channadaal, urad daal and curry leaves and leave 1/2 minute for frying.

6. Add onions and fry it until the nice fried onion smell comes out.
7. Mash potatoes and add it to the onions.
8. Add coriander leaves.
9. Add grilled coconut.
10. The palya is ready.
